Daily Delish – cookie monsters

So the Mister has been holding in a SERIOUS craving for some oatmeal cookies as of late. He refers to them as OMC’s, which I think is pretty adorable. He’s actually started chanting for them – when I don’t even have any! Seriously, what does this kid want from me?!
Anyway, yesterday I couldn’t take it anymore thought it would be super fun if we whipped up a batch together.
As always, we researched a bunch of recipes, and settled on one titled World’s Greatest Low-Fat Whole Wheat Oatmeal Raisin Cookie. Seems pretty legit, no? You all know of what a sucker I am for pretty packaging… I guess it’s safe to say it works on names, too!
I loved that the recipe used olive oil. You should know that we used the Splenda sugar blend and an egg replacer in place of the egg and sugar. I normally wouldn’t make these substitutions, but the Mister wanted to save on calories so he could EAT EVEN MORE OF THE COOKIES – cuz that’s how we roll
We also used pecans as the nuts (and those worked well) but I’m sure walnuts would be pretty tasty, too!

The cookies turned out wonderfully! We enjoyed them straight out of the oven last night – is there anything better than a cookie straight from the oven? To answer your questions, yes, apparently! Today, I packed a few for a snack and I actually like them BETTER after they cooled. Who knew? Maybe the flavors had more time to sit and absorb into the oats? In any case they were chewy and spicy, simply delish!
