Try it – Unplugged

The Mister and I are off work all week — or as we keep saying giddily, “NO more school!” (note: we are not students or teachers, just weird)

I AM THRILLED to have the time off — but can’t help but think about work every now and then — What am I missing? Is everything getting done? What about that project that was still in the works? Is everyone taking care of our clients’ needs? Did my billing go through OK? Am I up to date on timesheets?

What can I say — I’m a dedicated employee ;)

But despite my concerns, I have kept myself from checking email multiple times a day — if there is a problem, someone will call. If someone needs something, they will call. No sense wasting my precious time off with concerning myself with the goings-on at the office. Right? Right.

Now — onto planning our exciting adventures this week! Hmmm — I’ll get to that later. For now, I’m quite comfy having been in my PJs — i.e. sweats — for more than 48 (or has it been 72?) hours. Don’t worry, I’ve reapplied deodorant. Plus, they are really cute sweats ;)

Daily Delish – I’ll tap dance for tapenade!

Despite all the extravagant, gourmet food the Mister and I enjoyed on our vacation, it’s the simple stuff I can’t forget. Like The W’s tapenade. Made with fresh olives and black beans, this was the best tapenade I’ve ever tasted. I’d love to re-create it myself, but I fear my limited knowledge on tapenade ingredient ratios will hinder my ability. W, Vieques – can you help a foodie out?!

Any other foodies out there, have you seen (or made!) a similar recipe?

Daily Delish – Poolside Eats

One of my favorite things about our Puerto Rico vacation was the fact that we had no plans. So often we jam-pack our vacations with crazy itineraries and excursions. It was nice to only worry about planning to reapply our sunscreen. Most of our days were spent reading at the beach, lounging in the pool and, of course, eating delicious food. (Don’t worry, we did get some fun activities in there, too!)

One of my favorite lunches:

Roasted duck salad with fresh oranges, tossed in a lime vinaigrette.

Best enjoyed poolside ;)

This dish just screamed “summer!” to me, I loved the sweetness of the orange and the tangy tartness the lime dressing provided.
