Butternut Squash Bruschetta with Ricotta and Pumpkin Seed Pesto

The answer is yes.

Yes, this was as amazing as it sounds.

Last week the Mister and I went to a fancy dinner before catching The Blue Man Group.

When I spotted Butternut Squash Bruschetta, I knew my belly would not leave the restaurant without it.

Now look at me with a straight face and tell me that isn’t one of the most beautiful things you’ve ever laid eyes on.

And so simple! I could easily re-create this at home — it would make the perfect fall appetizer, don’t you think? Perhaps a yummy starter to a Thanksgiving or holiday meal?

The squash and the ricotta are so surprisingly delicious and the pesto takes the whole dish over the top.

I’m certainly no stranger to pairing fall starches with cheese, but ricotta is such a perfect complement.

Thank you, Moxie, for you genius flavor combination. I shall steal it and claim it as my own this holiday season ;)

Good morning, friends! How was your weekend?! For those who celebrate Easter and passover, I hope you had a beautiful blessed day yesterday ;)

By the way…I TOTALLY ROCKED my GRE test! I met AND exceeded my goal score. I can’t help but think all of you had a little something to do with it, too – so thank you, from the bottom of my heart ;)

Instead of giving a lengthy post with all the Easter deliciousness, I’m sharing some photos of my favorite bites – enjoy!
