So those lettuce cups were pretty amazing, no?
If you decided to be a meal-planning rock-star with me this week, you still have some leftover roasted chicken. Lucky you, I have another fast and delicious recipe!
Chicken Taco Salad
You’ll need:
- 2 romaine hearts
- 2 bell peppers, chopped (I used combo of green, yellow and red)
- 1 avocado
- 2 ears of corn, shucked
- 1 cup salsa
- 1 1/2 – 2 cups leftover roasted chicken, chopped
- 1 packet taco seasoning
- 1/2 cup cheddar cheese
- 1 tablespoon olive oil
- 2 tablespoons chicken stock
First, put a pot of water on the stove to boil — you’ll need it for the fresh corn.
Next, heat oil in a large saute pan. Next, add chopped bell peppers and cook about 3-5 minutes.

Add chicken, stock and taco seasonings. Stir and cook about 5 minutes on low.

While this is cooking, add your corn to the boiling pot. When finished, cut the corn off the cob and set aside.
Now it’s time to build our salad! Add lettuce to a bowl and pile on the chicken and pepper mixture. Top with chopped avocado, cheese and corn. Use salsa as “dressing.”


To add extra crunch, feel free to crumble some tortilla chips on top!

Oh.my.goodness.
What a weekend. The Mister and I have successfully moved (almost) everything into the new place. I know many of you are anxiously awaiting photos and you will get them — in time! It currently looks like a bomb went off — twice. I’m hoping this week we’ll be able to achieve some semblance of order. Wish me luck.
That being said, I’m not exactly at a good place right now to spend a lot of time cooking — nor do I have the room to, as I’m sure the Mister isn’t begging for pieces of packing paper and Styrofoam popcorn in his meal (added protein?).
So this week, I’ll be relying on my favorite and best assistant in the kitchen – my crockpot.
Oh crockpot, how I love thee.
You simple little thing that simply plugs into the wall and cooks EXACTLY how long I tell you to. Whether it’s chicken cacciatore, pork chops or my famous chili, you never get it wrong and for that, I thank you.

Now that I’ve made my obsession for this lovely appliance QUITE clear, I need your help! PLEASE hand over your favorite crock pot recipes (healthy dishes are preferred!). Leave a link in the comments if you have it. Let’s just say the Mister and I have had our fair share of pizza this weekend (don’t you know it’s a MUST when moving?) and we require homemade dishes with fresh veggies, lean protein and overall yumminess.
So please, help a girl out – what is YOUR favorite go-to crock pot recipe?
Good morning, everyone! Monday already? Not cool. Hopefully this recipe will help spice up your day and maybe even kick-start your week with a healthy, quick meal.
You’ll need (for 4 small patties - The Mister and I split the whole recipe for dinner)
Burgers
- 1/2 lb. ground turkey
- 1 cup black beans (mashed with fork)
- 1/2 cup crushed tortilla chips
- 1/2 tablespoon chili powder
- 1/2 teaspoon cumin
Salsamole- this makes plenty – extra for chip-dippin!
- 1 avocado
- 1 cup frozen corn kernels (thawed)
- 1 cup salsa (get fresh, quality salsa from your neighborhood grocery store — look for it with the refrigerated prepared foods)
First, combine all burger ingredients in a small bowl. Mash together with hands until all ingredients are incorporated.

Next, create 4 small patties (or two big ones!) and place on a skillet on medium heat. Cook about 7-8 minutes on each side or until meat is cooked-through.

While your burgers are sizzlin, get to work on the salsamole! Salsa + Guacamole = mouthfuls of heaven.
This recipe is so simple and you can use it for anything — dips, salads, sandwiches - sometimes I just eat it by the spoonful!
Combine 1 avocado, 1 cup salsa and 1 cup corn in a medium bowl. Mix and mash, breaking down the avocado, but still leaving some sizeable chunks (or not, if you like it smoooooth).


Now your burgers should be ready. Remove from heat. The Mister and I ate ours sans buns, but topped ‘em with a large serving of salsamole and a side of chips. Feel free to add yours to a bun or place on top of a salad – get creative!
