Good morning! How are we feeling this morning after too much pizza, chips and wings?
I thought so…
Worry not, I have a simple, delicious dish that will help us all get back on track. It’s a “dump” salad (dump a bunch of stuff in a bowl), that requires little to no effort, but tastes incredible! What’s more is that you can make a huge batch and eat it throughout the week for lunches, snacks, etc., and it won’t get icky!
You’ll need:
Ingredients
- 2 cans (15 ounces) black beans, rinsed and drained
- 3 ears fresh corn, cooked, cooled and kernels cut off the cob -(or two cups of frozen)
- 2 red bell peppers, diced
- 2 cloves garlic, minced
- 1 medium shallot, minced
- 2 teaspoons salt
- ¼ teaspoon cayenne pepper
- 9 tablespoons extra virgin olive oil
- 6 tablespoons fresh lime juice
- 1/2 tablespoon sugar
- 1 teaspoon lime zest (be sure to zest limes before juicing them)
- ½ cup chopped cilantro – set some aside for garnishing, as well!
- 2 avocados, diced
“Dump” all ingredients except avocados in a large bowl and mix well. Cover and chill for a few hours or overnight. Right before serving, add avocados and mix gently. Careful not to mash! Those avocados should be treated with the utmost care — they are key ingredient, after all ;) Garnish with a a bit of chopped cilantro and serve at room temperature.

It may not feel like Summer is coming, but that doesn’t mean it can’t taste like it!
To get in the Springy spirit, I enjoyed a refreshing salad yesterday.
I made this salad in large bowl that’s typically used to serve at least four, family style. Naturally, I was the only one at the table


In the mix:
- Spinach
- Mushrooms
- Strawberries
- Turkey
- Mozz
- Chopped pecans
- Dressed with Lemon Vinaigrette
This was the best salad I’ve made all year! I closed my eyes and thought of picnics, flip flops, sundresses, freshly cut grass, evening walks, lightening bugs and lemonade on the porch.
Then I opened them and realized we still have a long way to go…
But at least I didn’t dream up this deliciousness

Meet my new go-to, the lovely and tantalizing Casa Dolce. Yea, it’s true Casa Dolce has a wide offering of fresh prepared foods and amazing looking pastry (I’ve got to get back there for a cupcake!), but I’ve now had multiple run-ins with one of the salad specials.
Dear Casa Dolce,
If you want to make me reeeeeeallly really happy, please permanently add the Chicken Nicoise salad to your menu. Sure, I can do without the olives and egg, but those are just details — simple substitutions, really. And even though you mistakenly left a globe of death (olive) on my plate last time, all was quickly forgiven. Because when the whole fresh concoction is drizzled with your homemade lemon vinaigrette, suddenly all is right in the world.

p.s. it’s also really great that you let me pick a different vegetable when you were out of green beans. Your sweet potatoes are really out of this world — but that’s another letter.
For now, I’d like it to be noted that upon my death, I’d like to be buried in your candied almond slivers.

With fresh cooked potatoes, green beans, tomatoes, almonds, chicken and lemon vinaigrette, this salad is one of the best I’ve had in awhile. What consisted of your most recent salad fave?
