Good morning, friends!

Back to the old grind today…

Yep, back to work — officially.

As much as it killed me to leave my little bean this morning, I’m excited. I’m excited to use my strategic thinking again. I’m excited to catch up with my friends at work, whom I’ve missed more than they’ll ever know. I’m excited to meet the Mister for lunch during the day. I’m excited for hectic days filled with fast deadlines and the energy of the buzzing office. Am I crazy? Maybe a little ;)

But most importantly, I’m excited that the Bean will grow up knowing that his mommy is smart and hardworking. But of course when I walk out the door at the end of the day, everything stays at the office and it’s family time. I’m incredibly lucky that I have such a supportive work environment that’s allowing me to arrange my schedule to be home one day a week. All things considered, I think I have the best case scenario for a working mother. I feel so blessed.

But as a working mother, I know how tricky getting a yummy dinner on the table can be. Which is why I’m so excited to share this FOUR ingredient recipe. Added bonus –you’ll have it on the table within 20 minutes — I promise.

Taco Chops

You’ll need:

First, rub your chops with a liberal amount of taco seasoning.

Add to a skillet and cook on medium heat, about 10 minutes, turning halfway though.

In a separate bowl, combine salsa and corn and heat in a saucepan.

Plate chops.

Top with salsa mixture.

It’s not the prettiest, but if you serve it up with a colorful salad, you have a delicious and healthy meal in no time. And I don’t know about you, but with this little guy, I require all the extra time in the world ;)

Daily Delish – Mother’s Day eats make delicious leftovers

While I could have very easily had a successful Mother’s Day lunch by simply serving my mouth-watering cake, the rest of the meal was quite a success, as well! And a sugar-comma just didn’t sound like a fun way to spend the afternoon ;)

On the menu:

I’m just about to make myself a plate of leftovers before I head over to my 6:00 KICKBALL GAME! Last game before Playoffs!

While I’ve missed my Mister terribly, you should know that his absence has not been ALL negative (let’s just not tell HIM that – I quite like the idea of him thinking I’ve been a damsel in distress ;) ).

Case and point:

Want a similar meal? Kick your Mister/Misses out of the house for a week and pray that your Mama is as cool as mine.

Knowing I was going to be cooking for one all week, my Mom invited me over on Monday for a delicious feast. Tonight I’ll be heading over there again, but I think I’m grabbing some takeout. Stone Oven perhaps?
