Today’s dinner was just the way I like it – easy and delicious!
Chicken and vegetable skewers with Maui marinade. Marinade is basically pineapple juice, ginger and a bit of soy sauce.
Isn’t it crazy how much you can change up the taste of chicken with a simple marinade? I often make the same thing but with BBQ sauce – so tasty!

In all seriousness, though, skewers are a great way to serve up veggies, meats, FRUITS, etc!
Last night I grilled up some Italian marinated chicken, pepper and onion skewers. Knowing that I’d need a bit more to munch on, I made some of my tasty mushrooms and sugar snap peas.
Both did not disappoint!
With grilling season kicking into high gear, expect to see a lot more skewers from me! I’m most excited for PINEAPPLE — wouldn’t that make a wonderful sweet ending – perhaps paired with some cold ice cream?! YUMMMMM!
