OK, people, I know I tend to exaggerate. In fact, many times the Mister simply refuses to believe my “tales.” I mean come on, though — adding some fun details never hurts, right? ;)
But this time, my friends? I am NOT exaggerating.
This time, I’ll even attempt to under-exaggerate. Fair?
OK.
Yesterday I received the biggest bowl of soup I’ve EVER seen. It contained at least a 1/4 gallon of broth. And probably a half pound of pasta.

How high the bowl was (about 6 inches)
My head (it would be good to see for scale, as the soup bowl was bigger than it)

I’m pretty sure I had to hobble out of the restaurant – and I only ate about 1/4 of it!

It’s my favorite time of week! Other than the weekend of course…
But before kicking into weekend mode, let’s all take a few minutes and think about what made us thankful this week.
This week, I’m thankful that at any point, we can all start over. I’m thankful that if you want to accomplish something, it’s never too late — ever. The only thing holding you back is…YOU. What do you want to do? What’s stopping you?
As a fun, mental excercise I put together a list of “stuff” I want to do. These aren’t formal goals, but more of a checkpoint for myself. I think we should all do this once in awhile. Take stock of your life. Think about what you can be doing to make it more full-filled. Think about your passions — are you pursuing them? Nothing is too silly or far-fetched to add to list. In fact, writing our dreams down actually helps solidify them and increase the chances of them coming true. I’ll get us started with my list, but feel free to share your own (or keep it private
)
Things I want to do… (WITHIN THE NEAR FUTURE)
- Travel to Europe with the Mister
- Find a tap class – and take it! (I miss dance…)
- Get my children’s book published (any publishers out there?!
)
- Take a cruise through Alaska
- Learn how to make the perfect pie crust
- Host Thanksgiving (need a bigger house and kitchen for that!)
- Take ballroom dance classes with the Mister
- Start a family and make someplace our home
- Get back involved in community theater
- Learn how to french braid hair (seriously, how pathetic is that!)

One of my favorite things about our Puerto Rico vacation was the fact that we had no plans. So often we jam-pack our vacations with crazy itineraries and excursions. It was nice to only worry about planning to reapply our sunscreen. Most of our days were spent reading at the beach, lounging in the pool and, of course, eating delicious food. (Don’t worry, we did get some fun activities in there, too!)
One of my favorite lunches:

Roasted duck salad with fresh oranges, tossed in a lime vinaigrette.
Best enjoyed poolside

This dish just screamed “summer!” to me, I loved the sweetness of the orange and the tangy tartness the lime dressing provided.

I think breakfast might be my favorite meal of the day.
And it’s definitely one of my favorite meals to eat OUT. Especially when a city (like Chicago!) is sprinkled with heavenly spots like JAM.
My super cool aunt was kind enough to take me to the hot new spot before driving me to the airport.
Upon sitting down, we were presented with these little gobs of goodness.

Mini marmalade muffins with orange cream.
Adorable! Too adorable to eat? NEVER!
The homemade granola and greek yogurt immediately caught my eye.

See the raspberry preserves in the middle?

If there’s a hell, it’s a room of people being forced to watch others eat raspberry preserves and not getting to try any themselves.
Seriously.
