I&#039;m sure you can. but depending on the substitute you choose, I would probably add a bit more stock -- the tomatoes let out a lot of water and if you replaced them with a starchier veggie (say, carrots), the soup might not be as brothy. If I cooked it on the stove, I wouldn&#039;t probably let it cook most of the day 5 hours or so, otherwise the potatoes won&#039;t cook through. Hope this helps!]]></description>
