End of Summer Simple Supper – Swiss Chard with Sweet Roasted Peppers and Chili Pepper and Garlic Tilapia

Have I got a treat for you.
A colorful, flavorful meal that goes from fridge to table in less than 30 minutes.
These ingredients are in season this time of year and are a great way to take advantage of your local Farmer’s Markets before summer ends.
You’ll need:
- One full bunch of Swiss chard
- 4-5 small sweet roasting peppers (chopped)
- 1 tomato (diced)
- 1/4 Chili Garlic sauce – like this one + 1 dollop
- 1 teaspoon salt
- Extra Virgin Olive Oil
- 2 tilapia loins (or however many you’d like)
First, preheat oven to 375 degrees. Brush fish with olive oil and top with a dollop of the chili pepper sauce. Spread over fillet. Bake for 18-20 minutes, until fish flakes with fork.
While the fish is cooking, roughly tear your Swiss chard, leaving the stalk behind. Add to a saute pan with a bit of olive oil and allow to cook down. Next, add the tomato, peppers, salt and 1/4 cup chili sauce. Continue to cook, stirring occasionally.
Plate Swiss chard and top with tilapia.
Now take a bow, grab a fork and dig in.
