There is no doubt about it, folks, it’s burger season. And while the Mister and I didn’t get to kick-off the season this right weekend (read: no burgers consumed), I have lots of recipes in the hopper to help make up for lost time. And I wouldn’t be a very good friend if I didn’t share them with you now, would I?
Worry not.
Spinach and Goat Cheese Turkey Burgers
Burgers with Homemade Salsamole (sals + guac)
Chicken Parmesan Burgers
Tilapia Burgers
Tuna Burgers
Turkey Taco Burgers
Now tie up your apron and get grillin’!

With Bean having blue eyes and light hair (for now – the Mister and I both had light hair until we were like, two/three), it can get pretty irritating trying to tell people that he actually does have many of my features! I mean, I can’t say I blame them, it is hard to get past those eyes. But (almost) everything else? Mine! My chin, my cheeks, my mouth, my nose – even my eye – SHAPE! Sometimes I hit my breaking point and like to point this out — but instead of nods of assurance and recognition that my son is in fact, mine – I get worried looks of “this mom has lost her mind, she’s clearly on the verge of a breakdown, let’s slowly walk away.”
But seeing is believing, isn’t it?

Good morning!
Bean is on the mend.
Took the little monster boy to the doctor again yesterday and the poor sprite has the start of an ear infection. We got some yummy gummy meds in his system and he is looking (and feeling!) SO much better.
So much better in fact, that he went for a dip this morning!

Lots on the docket for the weekend — many preparations to be done for the MOVE, as well as a PARADE and festival if our little sickie is feeling up to it. Really hoping to get a date night with the Mister one of these nights, as well – it’s been way.too.long.
Before I peace out for the next 3 DAYS, (and because it’s becoming so expected that I’ll be tardy with this), let’s take a moment to recognize the “good stuff” from the week.
This week, I’m thankful for:
My other half, the PB to my jelly, the icing on my cake, my amazing Mister who I wouldn’t have gotten through this week without.
The luxury of good medicine and pediatric care – not everyone has this luxury around the world and we too often forget how blessed we are
My mother-in-law, who moved around her schedule this week to step in and pick up the slack — we appreciate you oh-so-much.
My mama, who continues to inspire me every single day. I love you more than you will ever know.
My baby bean, who despite feeling miserable, still makes an effort to snuggle, hug and laugh with his Mama.
**While there were many other things I could be thankful for, the above items are more than enough for this week — anything else at this point would just seem excessive **
