The Best Recipes from 2011

Make It

Good morning!

As I’m working hard to get my mojo back, I thought I’d fulfill a reader request I received last week.

Behold my favorite recipes from 2011 - guaranteed to make mouths happy. Enjoy!

Entrees:

Lemon Garlic Chicken Sausage with Roasted Green Beans

Oven roasted chicken thighs with mushrooms (you can prepare in the morning and pop in the oven when you get home!)

Lemon Garlic Shrimp with Roasted Chickpeasthis was the my favorite recipe of the year

Fish tacos with homemade corn and tomato salsa

Apricot Glazed Pork tenderloin

Roasted Chicken – It’s easier than you think (complete with a tutorial and meal plan for leftovers!)

Sides:

Roasted Carrots

Party food (give them a try for New Years!):

Stuffed Shrimp (lazy gourmet-style!)

Hi-ya! Chicken Tenders — tenders with a kick (siracha!)

Chocolate Espresso Fondue (no stove-top required!)

And finally, the best dessert I made this year:

Jenna’s Cobbler — which I healthified with whole wheat flour and cut a lot of sugar out of — leaving more calories for ice cream and whipped cream, of course ;)

Did any of you try any of these? What did you think? Do you have a favorite recipe you made this year? Feel free to share in the comments – I could use some inspiration heading into the new year!

Do you remember how magical snow used to be? You know, before it made you late for work or curse in the driveway. Take a moment to remember the good old days when snow was just…beautiful ;)

Mojo? It’s back!

Remember when I stuck to my “schedule” and posted interesting content for you guys?

See: What you should do if you can’t make it to the gym, How to prevent burnout, my review of the 30-day SHRED, my experience with P90x (week 2 and week 3), Kettlebells 101To stretch or not to stretch?, Making a big decision, Beauty Cream review, how to travel with a baby, what’s your love language?banish cravings- one sip at a time

What can I say, one little gremlin can certainly change things up, can’t he?

BUT I have some great posts in the works, such as…

Revisiting Meal Planning – The Mister and I have been relying too heavily on take out and this has got to change. I have some great recipes planned, but in the meantime, feel free to peruse some older meal planning posts, such as a week with Roasted Chicken (lettuce cups, taco salad) and a Week with Shrimp (garlic lemon shrimp with chickpeas, one dish shrimp + broccoli).

Body after baby – 10 month recap. Now that Bean has been out of the womb for as long as he was IN, I’ll report my progress.

Strength training - I’ve upped my game and I’m ready to share a killer workout. Did I mention it only take 20 minutes?

Product reviews (if interested): The new NuGo bars, Amy’s Light frozen dinners, Plum Organic baby meals (from the Bean!)

How I do my hair — you guys have asked me so many times and I keep putting it off. Mainly because I’m unsure how to share the info. Do you really want to watch a video of me doing my hair? I can’t think of anything more boring. If you are truly interested, I will do this for you, but it seems highly embarrassing.

20 minute ab workout — I’ve been doing this self-created workout for a few weeks now and already feel stronger. I’m excited to share it with you.

2012 goals — This is more for me than for you, but figured we could all benefit from dreaming about the future together ;)

Am I leaving anything out? Please let me know if you’d like me to post about something. I know I can get carried away with Bean-posts (although i certainly haven’t gotten any complaints!), but I want to make sure you are still getting what you came for.

Please share your requests in the comments — what are you looking for? Recipes? Workouts? Fashion tips? Mommy insights (I say insights vs. advice, because I’m obviously no expert!?
