Make it – Lemon Garlic Chicken Sasauge with Roasted Green Beans

I may have mentioned that the Mister and I are enjoying a staycation this week. No big plans, just lots of maxing and relaxing with our little bean ;)

Sometimes vacations are perfect for spending time in the kitchen that you normally don’t have — perfecting a recipe, trying something new — this is not one of those times.

Instead, I’ll be relying on easy dishes that taste delicious and take less than 30 minutes. Like roasted lemon garlic green beans and sausage.

You’ll need:
1 package of roasted garlic chicken sausage
Two large servings of green beans
1/2 white onion, sliced
1/2 lemon
Salt and pepper
Extra virgin olive oil

First, preheat oven to 400 degrees. Next, rinse beans and scatter on a cookie sheet. Add onions and drizzle lightly with olive oil. Season with salt and pepper and bake for 20-25 minutes, until onions are tender and beans a browned.

While beans are cooking zest the 1/2 lemon and add sausage to a skillet. Brown sausage on medium heat and set aside.

Once beans are done, toss with lemon zest and the juice from the 1/2 lemon. Serve with sausages and enjoy!
