Make it – A new favorite – Stuffed Chicken

Good morning and Happy Monday!

Nothing like enjoying a fantastic weekend and then being shoved back into reality, huh? (I’m openly hating everyone who is off work today)

Well for those of us who actually had to rejoin the rat race this morning, I have a recipe that takes only about 30 minutes and looks (and tastes) like you spent hours in the kitchen. And for those of you who have the day off: make this for someone who had to go into work today — they’ll think you’re a domestic godesss. Don’t worry, I won’t spill the beans. Another plus? This recipe is totally customizable!  Let me explain.

Start with a chicken breast (after you preheat the oven to 375)

Cut a slit in the side of the chicken breast and continue, “butterflying” the meat about 3/4 of the way down. Now stuff the slit with some greens and cheese – I chose arugula and pepper-jack cheese — the spicy arugula works so well with this cheese! Other suggestions: spinach and provolone, peppers and cheddar – get creative!

Next, brush with olive oil and season with a complementary spice. For my spicier cheese/meat, I chose a Cajun blend.

Now cook for about 15 minutes on a foil-lined baking sheet.

While that’s baking, prepare your side dish. To play off the spiciness of my main course, I choose a refreshing blend of veggies, which I tossed with salt and lime juice. Sound delicious? It was.

You’ll need 1 cup frozen lima beans (thawed), 1 cup corn and a small container of grape tomatoes (cut in half).

First add about 1/2 tablespoon of olive oil to a skillet on medium heat. Add lima beans and corn and cook about 3 minutes, stirring occasionally. Then add tomatoes and cook about 2-3 more minutes. Remove from heat and add the juice of one lime and a pinch of salt.

Serve with your spicy chicken and admire your culinary genius.

Cheesy goodness in every bite.

How would you stuff your chicken?! Next time I make this I’m going to go with spinach and provolone and top the whole thing with some marinara. Another idea - stuff with black beans and cheddar, and top with salsa! Get creative and please share your ideas so others could steal them and come off as domestic gods(esses) ;)
