Make it – Burgers and salsamole – a match made in heaven!

Good morning, everyone! Monday already? Not cool. Hopefully this recipe will help spice up your day and maybe even kick-start your week with a healthy, quick meal.
You’ll need (for 4 small patties - The Mister and I split the whole recipe for dinner)
Burgers
- 1/2 lb. ground turkey
- 1 cup black beans (mashed with fork)
- 1/2 cup crushed tortilla chips
- 1/2 tablespoon chili powder
- 1/2 teaspoon cumin
Salsamole- this makes plenty – extra for chip-dippin!
- 1 avocado
- 1 cup frozen corn kernels (thawed)
- 1 cup salsa (get fresh, quality salsa from your neighborhood grocery store — look for it with the refrigerated prepared foods)
First, combine all burger ingredients in a small bowl. Mash together with hands until all ingredients are incorporated.
Next, create 4 small patties (or two big ones!) and place on a skillet on medium heat. Cook about 7-8 minutes on each side or until meat is cooked-through.
While your burgers are sizzlin, get to work on the salsamole! Salsa + Guacamole = mouthfuls of heaven.
This recipe is so simple and you can use it for anything — dips, salads, sandwiches - sometimes I just eat it by the spoonful!
Combine 1 avocado, 1 cup salsa and 1 cup corn in a medium bowl. Mix and mash, breaking down the avocado, but still leaving some sizeable chunks (or not, if you like it smoooooth).
Now your burgers should be ready. Remove from heat. The Mister and I ate ours sans buns, but topped ‘em with a large serving of salsamole and a side of chips. Feel free to add yours to a bun or place on top of a salad – get creative!
