Eggs.

They can have a pretty bad connotation at times, no? Healthy menus always promote egg WHITES or egg substitutes and you hear lots of contradicting facts around cholesterol.

This is where things get a little complicated.

It is overly simple and incorrect to say egg yolks raise cholesterol. The fact is, there are many other factors involved! The type of saturated fat, individual genetics, current health status, exercise and the big picture of what else is consumed in the rest of the diet – to name a few!

In addition, research has recently shown that eggs ARE NOT THE BAD GUY!

These studies have freed the egg from its preconceived “evil” connotation and people are finally recognizing the egg for what it actually is — a great source of protein and nutrients. The egg yolks contain a high source of lutein and zeaxanthin - carotenoids that protect against cataracts and macular degeneration.

Egg yolks are also the richest source of choline, a member of the vitamin B family, you can get. Choline supports the brain and nervous system function by maintaining the structure of brain cells, and is a key component of the neuro -transmitter acetylcholine that helps relay messages from the brain and through nerves to the muscles.

Choline is also contributes to fetal brain development and helps prevent birth defects. Two eggs provide about 250 milligrams of choline, or about half of the recommended daily intake for pregnant or breastfeeding women.

But while the egg has been deemed an important source of nutrition, you shouldn’t start eating daily dozens! You wouldn’t go and guzzle a bottle of olive oil, would you? (don’t answer that…) But that doesn’t mean moderate doses aren’t extremely beneficial!

Bottom line — don’t be afraid to eat real, fresh eggs! They are 20479 times more delicious and provide quite a nutritional punch! Just don’t start going all Gaston on me.

  4. I absolutely eat real eggs, although sometimes use egg substitute or egg whites when I bake. If you’re eating egg every single day or have cholesterol problems than an egg substitute is probably best, but since I eat them rarely, a little yolk can’t hurt. ;)

  7. Ooh I love the idea of an egg in a baked sweet potato!! Whenever I eat eggs, I always eat the yolk. My favorite way is probably scrambled with a little ketchup (pure comfort food)!

  8. I love eggs and eat them all the time! I think everything in moderation is fine. And have you ever looked on the ingredient list of egg whites in a carton? You know the kind you buy at the store? YUCK! So many ingredients! I’m sticking with the real thing! Thanks for the info!

    those eggs look awesome. I love this post because whenever I talk about eggs on my blog, I specifically mention how I want nothing to do with that egg white crap. I am a firm believer in the egg whites + yolk in all its glory. Egg whites only are my biggest pet peeve!

    I eat eggs and think the yolk is the best part. I have them a few times a week.
    My favorite way is to have poached eggs with sauteed Kale and roasted potatoes (the potatoes are seasoned with thyme and lots of ketchup on the side for dipping).
    I also really like to poach eggs in tomato sauce. (Just make a quick tomato sauce in a pot on the stove and crack an egg in it when it’s simmering- it cooks in 3 min. or so).
    Oh and on top of macaroni and cheese with broccoli, peas, and lots of hot sauce.

  15. We usually have eggs on the weekend or for a special dinner. if we make an omelete we will throw in a couple eggs with egg whites to “healthy it up.”

    P.S. – I’ve tried your “Egg-cellent Baked sweet potato twice and LOVED it! Delish

    Thank you for defending my beloved yolks! I’m always on the verge of anemia, and the yolks are iron SUPERSTARS, so I love them for that. And I love love love a runny yolk on toast or salad or pasta or sweet potato hash mmmmmmmmmmmmmmmmm mmmmmmmmmmm!

    Now I really love eggs, and frequently add them to meals (hello yummy egg on a burger)…but that egg in the sweet potato really threw me for a loop. I’m dying to see if that’s any good. I admire the “thinking outside the box” on that one. :)

  18. Nothing wrong with eggs! Such a common misconception- my step sister thought I was trying to “throw her off track” when I told her an egg wouldn’t kill her. Geez. Haha.

    I love eggs but took a brief hiatus from them after eating low carb for two yrs but I came back to them!

    I love scrambled, sunny side up, hardboiled and basically any way. I made egg in a hole tonight and it was fabulous. I’ve never paired up with sweet potatoes though, that could be muy interesante!

    Yumm! I love eggs! I’ve never really been a big fan of the yolk (especially in hard-boiled eggs, with the mushy, slightly chalky yolk that gets mushy and stuck around your teeth… yuck!) so I’d usually just take it out. But I guesssssss I should start eating it more? :P

    For a long time, I stuck mainly to eggbeaters and egg whites – but lately I’ve been enjoying the real, whole egg too. (I still eat the others too, it just depends on the meal.) I am happy to embrace the egg since it is so incredibly good for you, and anyway, I’ve always had what my doctor calls “remarkably low” cholesterol so I am not too worried about that!
