Make it – cozy up to a big bowl of white chili

It is a MONSOON out there! With rain in the forecast for the rest of the day, I figured it’d be the perfect evening for White Chili (as opposed to my traditional chili). I dunno something about the rain has always made me crave soup (and sleep)! I’m sure I’m not alone in this either, right?

Instead of having to worry about cooking when I get home from work, I made things easy on myself and whipped it up this morning. Added bonus: the flavors will be workin’ for me all day, providing extra deliciousness.

This recipe is super easy, and takes about 15 minutes. Also makes great leftovers!

You’ll need:

Cook the ground turkey until browned, breaking apart. Add beans, chilies, garlic, water and spices. Bring to a boil.

Simmer on low heat, stirring occasionally.

Optional toppings: Tortilla chips, CHEESE, salsa, sour cream, fresh herbs

Now cozy up to your Mister/dog/cat/girlfriend/stuffed animal, turn on some tunes and talk about your day – doesn’t that sound lovely?
