Wowzers! What a whirlwind of a day!
I apologize for being MIA — but I’m off the cuddle up with the Mister (you know where my priorities are!)
A crazy day calls for a simple, comforting dinner, no?
I roasted up some turkey cutlets and topped with a jar of gravy (so sue me!). This was served alongside frozen sweet corn (heated up, of course!). As you can see, I really went all out today! But we all have these days, don’t we? When even a 20 minute meal sounds overwhelming? Well we all know that I can’t order TAKE OUT!
But who says that “fast food” can’t be homemade and healthy!! Sure, it wasn’t the most inventive, or fun to make, but it did the job in providing an easy, delicious AND healthy meal.
What meal do you make when you crave something “homemade” but are pressed for time? I could use your ideas!

We often have turkey burgers or pasta with turkey meatballs when we want something comforting and fairly healthy. Both are always served with big salads.
I tend to go for the healthier quick food options like Trader Joes chicken sausage, tuna salad on a salad, or pasta w/sauce

Usually I’ll make a meal and then portion it out in the freezer so if I want something quick + homemade, just microwave it!
I totally understand days like that…i tend to do grilled sandwiches and change up the insides. i think when i can eat meat again i might take your dinner and turn it into a Thanksgiving themed sandwich!
I actually love making “fast food” at home–so much healthier yet still tastes sinful. Yours reminds me of KFC! Yummy!
