Good morning, everyone! I’m so excited to share a new discovery I found at the grocery store!
Last night, I had only about 1 hour between work and kickball (update: I am getting GOOD! – not just better, but actually GOOD – even the Mister confirmed
. I forgot to put a meal in the crockpot, so I was really ‘winging it.’ Then I remembered a new product that caught my eye at the grocery store this weekend.
Now, while Dominex Eggplantlooked new to me, apparently they’ve been the experts in eggplant for 25 years! Convincing, yes, but hasn’t Kid Cuisinebeen around just as long? (blech!) Before jumping to conclusions, I figured I’d let my army of tastebuds take on Mr. Dominex, one bite at a time.
I decided I’d make and Eggplant Parmesan sandwich. I pan-fried the cutlet for about 1 minute on each side (I used PAM, no oil!).
I then plated with an Arnold Sandwich Thin and melted slice of provolone.
I heated up some pizza sauce — cuz no one likes a dry sandwich!

Just take a good look at that little guy. Wowzers. For only about 275 calories total, I experienced the closest thing to fried food in YEARS. It almost felt wrong! But then I remembered Dominex products contain ZERO trans-fat and very little total fat. Mama Mia!
When the Mister and I got home from kickball, he was whining that he was “soooooo hungry.” When I mentioned the eggplant cutlets, he turned his nose at me. I gently reminded him that an Eggplant Parmesan sandwich is quite similar to his favorite dish of all time (he still wasn’t buying it). On the verge of snapping at him (he was driving me mad!), I kept my composure and told him this was his only option. Defeated, he agreed.
Not wanting to miss my “I-told-you-so” moment, I peered my head out of the hallway to watch him eat it. SUCCESS! I’m pretty sure that if he didn’t know I was watching him, he would have let his state of euphoria shine through — at least that’s what I’m telling myself
