Make it – Spinach Pasta

Happy Monday, everyone!
I know Mondays are a little on the sucky-side, and the last thing you want to do is come home from work and make an elaborate, complicated meal. Luckily, I have a yummy solution for you – and it takes less than 10 minutes to make.
You’ll need:
- 4 servings of your favorite pasta – I used spinach pasta
- 2 cloves of garlic (minced) – use more or less, to taste
- 6 sun-dried tomatoes (chopped)
- 1/8 cup olive oil
- 3 tablespoons Parmesan cheese
- Black pepper, to taste
Cook pasta according to directions. Drain. Toss with all ingredients.
Enjoy!
I made this last night for the Mister and my parents – it was a hit! I actually served it along side my stuffed red peppers, for a complete meal.
This is so incredibly tasty that it deserves two photos… just ’cause.
