So you all know how much The Daily Balance household loves Amy, right?
Well folks, she’s done it again.
Last week I received a package with some of Amy’s newest offerings, including Spanish Rice and Red Bean soup.
I set everything aside and figured I’d resort to them when I was pressed for time, for a quick grab-and-go lunch or easy dinner. With the Mister and I both having a much-needed sleep-in morning (and the fact that I desperately need to go grocery shopping), today was the perfect day to rely on my good friend, Amy.
I chose the Spanish Rice and Red Bean soup and packed a few of my favorite crackers to round out the meal.

As appetizing as my soup poured into Tupperware looked, I made the executive decision to NOT photograph this meal. Why? Because I didn’t want anything in this post to convey this dish was anything short of amazing! Incredibly flavorful, this hearty soup was dense and full of nutrients and fiber to keep me going through the afternoon. As I sit here, more than an hour has passed since I had the soup and I am SO FULL – almost uncomfortably so!
I’ll definitely be purchasing this in the future — for those who want to add additional protein, and make more of a ‘meal’ out of the soup, I think adding chopped grilled chicken would do the trick!

I’ve seen Amy’s soup around the blog world more than anything lately… I guess it’s the season for soup! I’ll definitely have to pick some up next time I’m at the store. It’s so much easier than making your own
I agree, these soups are pretty darn good. I sometimes add in some hot sauce or parmesan. Overall, I have been happy with Amy

I probably rely on “grab-n-go” meals at least once a week, if not more.
My “grab and go” meals are homemade soup or other things that I stick in the freezer. Or leftovers from the night before
And when all else fails, nothing beats a PB&J sandwich!
