Make it – Tilapia burgers

When I was at the grocery store last week, I noticed that tilapia was on sale. Not knowing how I would serve it, I bought one pound and figured I’d scan my recipes at home to see what struck my fancy. I then remembered my Tuna Burgers and thought that I could change up the recipe a bit to create tilapia burgers. The following recipe was born:

4 servings (serving size: 1 burger)
You’ll need:
- 1 cup finely chopped red onion
- 1/4 cup finely chopped green bell pepper
- 1/4 cup finely chopped red bell pepper
- 1/4 cup finely chopped yellow bell pepper
- 1/4 cup green onion
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 (1-pound) tilapia fillet, skinned and chopped
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 large egg white
- Cooking spray
Combine first 8 ingredients in a large bowl. Combine lemon juice, dijon mustard and egg white in a small bowl; add egg white mixture to tilapia mixture, stirring well to combine.
Divide the mixture into 4 equal portions, shaping each into a 1/2-inch-thick patty. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add patties, and cook 3 minutes on each side or until desired degree of doneness. Serve patties alone with a simple salad or on toasted bun of choice.

I’m just gonna throw this out there and say that you are the queen of burger recipes. Now the real question is which one did you prefer, the tuna or the tilapia?

I tried making these and they didn’t form into patties but fell apart. Any ideas what I am doing wrong?
Bonnie — Are you sure you added the egg white? That’s what holds everything together! Sometimes if i’m having problems, I’ll add another egg white or even a little bit of bread crumbs to help hold everything together.
