French toast, that is!

If you are a pumpkin lover, this recipe is for you. Inspired by a tweet from RecipeGirl, and seeing her creation, I decided to try my own hand at pumpkin pie french toast. Ladies and gentlemen, I think I’ve done it! I bring you a ‘The Daily Balance‘ ORIGINAL!

You’ll need (serves 1):

1/8 cup milk

1/8 cup egg beaters

1/8 cup pumpkin puree

few dashes of pumpkin spice, to taste

Mix all of these ingredients in a bowl

Take 1 slice of whole wheat bread and douse into bowl, covering both sides with wet mixture. Cook in a skillet on medium, about 1-2 minutes each side.

You now have pumpkin french toast, which would be quite tasty with a drizzle of maple syrup. But if you are feeling adventurous, why not make it pumpkin PIE french toast?

In a microwavable cup, combine a few tablespoons of vanilla pudding (I used JELLO’s), a few tablespoons of pumpkin puree and a dash of pumpkin spice. Add a splash of milk and microwave for about 30-45 seconds.

Spread on top of french toast and serve warm. Top with a dollop of whipped cream and a dusting of pumpkin pie spice.

ENJOY! Note: if I had syrup in the house I would have used it, so feel free to drizzle some on there!

    I made whole wheat pumpkin/chocolate chip/pecan muffins this weekend…yummy!! I love fall and the flavors we can enjoy, like pumpkin! :)

    I love the topping you put on it! That sounds like a perfect fall breakfast!!

    My favorite way to eat pumpkin is either mixed with Greek yogurt/oatmeal OR pumpkin pie without a crust. Prepare the pie as usual but just bake it in a bowl instead of a crust.
