Warning: These are not healthy. At all.
Warning: If you don’t want to be tempted to eat the entire batch in one sitting, do not make this recipe. If you want to be remembered as the person who makes the best peanut butter cookies known to man, make them NOW.
The Mister and I went to Columbus this weekend to visit two of our best friends, Peter and Tiffany. Tiffany is the definition of a domestic goddess. Every time we go down to visit she whips up some amazingly fantastic dessert that puts the Mister and I into a state of euphoria. In fact, we always make sure we work out extra hard for a few days before heading down there so we can enjoy her treats without worrying about calories or fat (all about balance people!). This time, she concocted the best peanut butter cookie I’ve ever had the pleasure of tasting (and trust me, I’m a cookie gal, I’ve had my fair share!). And this time, I was able to snatch the recipe so I could share it with all of you
Tiffany used a recipe from Smitten Kitchen, which was adapted from a Magnolia Bakery Recipe (click here to read about my experience at Magnolia).
Tiffany would want you to know that she altered the recipe a bit and we all feel that she actually managed to make them taste BETTER. These are the changes she made:
- 1 1/2 cups all purpose flour
- 1/2 cup peanut butter chips
- 1/8 cup milk
- OMIT chocolate chips
Omit chocolate chips, you say?! How dare she! Well, If you are looking for a true, decadent peanut butter cookie, you’ll want to omit them, as well. While chocolate is amazingly delicious, the addition of the chocolate chips distracts from the creamy peanut buttery goodness. The peanut butter chips melt into the cookie so beautifully, you really don’t need anything else. Tiffany made 19 cookies from this recipe and each cookie came in around 250 calories, which, yes, is quite a bit for ONE cookie, but I guarantee it’ll be some of the most decadent, delicious calories you’ve ever tasted. I ate 5 of these over the course of the weekend. Good thing I went running on Saturday morning! Like I said, all about balance

So who doesn’t love LARABARS? They are nothing new, that’s for sure – although they did just recently announce three new flavors! I can’t wait to try the Peanut Butter and Jelly… You out there LARABAR? Feel free to send samples, OK? Seriously, I’m not trying to be cute…I really want samples. I mean let’s face it, I live in Cleveland, not exactly the #1 spot to receive the latest and greatest products and trends, so I wouldn’t be surprised if these didn’t hit shelves here until 2025. I’m being serious. I saw scrunchies being sold in some stores this past weekend with the word “fashionable” on the signage. I wish I was kidding.
Anyway, I digress. Ah, that’s right LARABARS – they rock!
I enjoyed this little guy this afternoon.

Lara Bar Pecan Pie

Happy Friday!!! I’m scrambling around the house like a madwoman! The Mister and I are going to visit two of our best friends in Columbus this weekend (and their adorable daughter!) so we’re trying to pack up the car before I drop the Mister off at work and head to the hospital for my pre-admission testing for my surgery next week! Phew! OK, enough talking, onto the good stuff…
