Daily Delish – Celebrating the anniversary with the fam

Last night the Mister and I were lucky enough to celebrate our love with two other fabulous couples: my mom and dad; and my brother and his girlfriend, Erin. Since the Mister and I work downtown, they were kind enough to meet us in the city for dinner. We went to a fun and delicious spot, Fat Fish Blue.

I (and three others at the table!) ordered the pan-seared salmon with watermelon-cucumber salsa and roasted vegetables.

This was amazing! I loved the watermelon…what a creative ingredient, huh? It added a refreshing sweetness to the dish, without being too overpowering or sugary like most glazes usually are. The salmon was also cooked perfectlyand melted in my mouth. I definitely plan on trying to recreate the flavorful salsa, as I’m sure it would work well with many other main dishes.

    Happy anniversary!! The food looks great too :) I’ve been seeing recipes everywhere with watermelon in them (soups, salads), but I don’t know if I’m ready to make the jump :P I love fruit so much that I’d rather eat it by itself rather than mixed with other things…
