The Daily Balance

Last night the Mister and I were lucky enough to celebrate our love with two other fabulous couples: my mom and dad; and my brother and his girlfriend, Erin. Since the Mister and I work downtown, they were kind enough to meet us in the city for dinner. We went to a fun and delicious spot, Fat Fish Blue.

I (and three others at the table!) ordered the pan-seared salmon with watermelon-cucumber salsa and roasted vegetables.

This was amazing! I loved the watermelon…what a creative ingredient, huh? It added a refreshing sweetness to the dish, without being too overpowering or sugary like most glazes usually are. The salmon was also cooked perfectlyand melted in my mouth. I definitely plan on trying to recreate the flavorful salsa, as I’m sure it would work well with many other main dishes.

   Happy anniversary!! The food looks great too I’ve been seeing recipes everywhere with watermelon in them (soups, salads), but I don’t know if I’m ready to make the jump I love fruit so much that I’d rather eat it by itself rather than mixed with other things…
