Daily Delish – Blueberry muffins are my ticket to becomming a domestic goddess

So I don’t want to brag, but I was kind of a domestic goddess yesterday. Hey, I’ve gotta do what I can to make sure my amazing Mister doesn’t run out on me! After cleaning the house and doing two (yes, two!) set of dishes (yes, I realize I would have only had to do one if I didn’t procrastinate…), I whipped up a batch of muffins.

But don’t worry — you can be a domestic goddess, too!
I modified a recipe that Jenna posted and they turned out AMAZINGLY well. I reduces the amount of sugar and used egg beaters instead of eggs. Instead of using 3 tablespoons of butter I used 1 tablespoon of butter and 1 tablespoon of olive oil. I like that I was able to substitute olive oil to get in some heart-healthy fat. Make these NOW. They are amazing.
You’ll need:
- 1.5 cups whole wheat pastry flour
- 1/2 cup sucanat (raw cane sugar)
- 1 tbsp butter
- 1 tbsp extra-virgin olive oil
- 3/8 cups egg beaters
- 1 banana, mashed
- 1/3 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/3 cup skim milk
- 2 cups fresh blueberries
Preheat oven to 375 degrees.
Melt butter over stove top and add olive oil. Once melted, remove from heat. Add milk, egg beaters and mashed banana. Whisk well. Set aside.
In a large bowl, combine dry ingredients. Add wet ingredients slowly and stir until incorporate. Gently fold in blueberries.
Spoon batter into paper-lined muffin tines and bake for 25-30 minutes or until golden brown.
Since I’m super helpful, I figured out the nutritional breakdown per muffin:
- 149 calories
- 2.8g fat
- 29.4g carbs
- 3.6 g fiber
- 3.2g protein
These muffins turned out SUPER MOIST. If you like a drier, more crumbly muffin, I’d suggest reducing the olive oil.

Chocolate chip cookies are my domestic goddess go-to. I always have the ingredients on hand, so that Matt (or house guests) can say “I could really go for some cookies right now!” – I just disappear for a half hour and return with a freshly baked plate of them, and my domestic goddess-ness is awed for the rest of the day.
I’m planning to make those tonight! I printed Jenna’s recipe as soon as I saw it!
