Daily Delish – An envelope worth licking!

Well, if you follow me on twitter, you know that I had a doctor’s appointment today — those are never fun! This one was particularly not fun, because I found out that I have to have surgery again. Remember my sexy legs? Yes, the ones with the circulation of an 80 year old?? Yep, well, looks like my vascular problems are back with a vengeance. My valves have once again collapsed (a bit more serious than before) and will need to be removed so that they don’t affect my healthy veins. The good news is that no main arteries have been affected and having the surgery will keep it that way! We grow new veins all the time, so while removing some veins sounds kinda serious, I assure you I’ll be just fine ;)

But tomorrow I’ll be scheduling my (second) surgery for July or August. I can’t say I’m happy about it. You all know how active I am and how much I enjoy rocking it out at the gym or even powerwalking with my mom. But I know that this surgery will contribute to my overall health and well-being and I’m pretty excited not to have pain in my leg anymore!

So now, onto the fun stuff – EATS! The Mister had to take a client out to dinner yesterday, so I met my family for dinner at one of our favorite local spots, Yours Truly. Check out this list of fun facts from the Yours Truly Web site. I ordered my favorite item on the menu, The Envelope, which is a fresh pita stuffed with baby spinach, tomato, cucumber, muenster cheese and choice of dressing (I order fat free french). Per usual, I asked that fresh mushrooms be stuffed into the envelope, as well.

It was delicious! The spinach and mushrooms make this a very filling sandwich and I love the extra punch of flavor from the French dressing. Gotta love that muenster cheese, too! I feel like I don’t have nearly enough opportunities to eat that goodness!

Have you ever had a surgery that required you to take a bit of a rest from your normal activity? How did you deal with it?

    I always do exactly the amount of exercise/working out that the doctors say I can do safely. So if they say I can walk up 5o 2 miles a day on a treadmill, I make sure that I’m on that treadmill every day getting my 2 miles in. :D

    Hopefully you’ll have a fast recovery so you can be right back up and at it like normal!

    Hi Shannon!! YEAHH wisdom teeth extraction…the mother of all oral surgeries. I had it done 4 times for 4 different teeth and i could only do melted ice-cream and yogurt for 24 hours, but that’s not bad at all! heheheh

    Shannon, i love that post on the scale! I always thought i would never need one but your post is making me re-think that!!! :)

  3. That sucks about the surgery, but if it’s going to help with your overall health then I guess it is worth it, hey? Best of luck with everything and I hope you have a speedy recovery!

    Sorry to hear about the surgery :( I’ve *luckily* never had anything major wrong with me that I can remember. I say ‘that I can remember’ because when I was 6 months old I had meningitis! Scary for my parents but I’m okay now!

    I haven’t had surgery, but I have had a reocurring stress fracture. To help stay in shape I did a lot of sitting down arm exercises. I also just let myself rest because, hey, and injury is the body’s way of telling us to slow down! Good luck with your surgery.

    So sorry to hear about the surgery. My heart goes out to you! I blew my knee out in 2007 and had 2 reconstructive surgeries since then. The second surgery was the worst because they put me in a leg cast all they way up to my hip for 2 months. And I was bedridden for the first 2 weeks. Miserable.

    Is it on one or both legs? How long will you be laid up? I became a pro at breaking a sweat without using my legs…crutching around the neighborhood, row machine without strapping in my legs, pushups, etc.

    I definitely had to watch what I ate. And the fact I was stuck at home and bored made it even worse. I made myself an eating schedule and forced myself to stick to it.
