If you ask my boyfriend, he’ll gladly tell you that, when I’m not blogging about chocolate, I’m usually eating it. Still, despite my seemingly one-track-mind, I really do appreciate balance. Which is why, today I bring you: guilt-free pumpkin chocolate chip cookies.
Chocolate chips? Cookies? How can that be guilt free?
Answer: There is NO butter! Instead, it uses a little bit of oil and a lot of canned pumpkin. Pumpkin is all kinds of good for you, and haven’t you heard? Dark chocolate is going to single handedly save your life. Plus, I like to make my cookies small, so I can eat more of them.

But, you ask, if they’re so healthful, can they actually taste good?
These cookies are award winning, show stopping, and knock-your-socks off good! The recipe is originally from Ms. Cookie Madness herself. But as I have made them 1,000 times, I no longer use the recipe.
Well, actually–it’s honesty time– what really happened was, I printed the recipe a long time ago, and then, recently all of my paper recipes became napkins in a water disaster (don’t ask). So, last night I made a batch of these puppies relying on my oh-so-great memory, and… they didn’t come out so good. They tasted like pancakes instead of cookies (I think I doubled the egg!).
But they really need to taste good because I am sharing them at training workshop we’re having tomorrow at work, so I made them again tonight.
When they came out, (the second time) they looked like this:

A little wonky shaped to be sure, but, truth be told, I like my cookies in all different shapes. And, these totally taste like heaven.
Add a spot of tea, and you’re ready for a balanced, delicious, wholesome afternoon snack.
