Being a college student is hard.

Being a vegan, health-conscious, yoga and running obsessed, engineering major is even harder.

But hey, I’ve never been one to back away from a challenge, and balancing schoolwork, a social life, and a healthy life style is something that I take very seriously. I’ve had some unhealthy habits in the past, and a new dedication to doing what’s right for me has been my priority for this school year. I moved in to my own house (well, I do have roommates) with a kitchen, and so many of my friends are amazed at the healthy, delicious, and animal-free items that come out of that tiny room.

To keep my brain operating at it’s optimal level and my body full of energy, I try to eat as many whole, natural foods as possible. With a limited budget and some major time restraints, this is not an easy task, but I do what I can and can say that I do eat about a million times better than the average Ramen-inhaling, free pizza-downing, beer pitcher-jugging kids that are my peers.

Breakfast

I need to eat as soon as I wake up. Taking my time makes me nauseous and grumpy, so I whip up large meals to get my day started. I try to balance whole grains, healthy fats, some protein, and a little bit of sugar to really satiate me and hold me through a few hours of class.

Snacks

I have between 1 and 4 snacks during the day, averaging at about 200 calories. What I eat really depends on where I am and what I have available to me. Sometimes it’s just a bar and a piece of fruit, where as other times I can make some tofu pudding topped with a little granola.

Lunch

Lunch is usually eaten on the go, either in class, at the library, or at my desk at work. There are a million different vegan sandwich and wrap options, and as long as you load them up with veggies and balance protein and whole wheat carbohydrates, you’re good until you get home for a snack.

I love to get creative for dinner, which is the only meal that I don’t feel super rushed to get going. I’m usually pretty hungry from my afternoon workout, and I make sure that what I’m doing will keep me full but leave a little room for dessert.

Dessert

Just because I don’t eat eggs or dairy doesn’t mean I don’t have a sweet tooth. I love to bake, and I have been known to just not mention the fact that my baked goods are vegan to my meat-obsessed guy friends. I let them rave about the treats until I drop the bomb that they just ate an animal friendly meal.

This is a pretty typical selection of the stuff that I like to eat on a daily basis. I love my greens, sweet potatoes, and really anything else I can get my hands on.

    So interesting to see what you eat as a vegan! How do you dry-roast the edamame? It looks tasty done like that. And I love how hummus can be added to just about anything.

    As far as that roasted edamame goes, I cheat and buy it at the grocery store. Both Whole Foods and my local Giant Eagle carry it, and it’s about $2 for a 4 serving bag.
