As someone who always tries to take the easy way out simplify my life, I was pretty stoked to receive a sample kit from Annie Chun’s to create the perfect (and authentic!) Chinese take-in dish. Noodles? Check. Sauce? Check. All I needed was some lean meat and veggies – easy enough! I’m all about using simple fresh ingredients to create a nourishing meal. While fancy dinners can be fun and really great when you need to impress your in-laws, the Mister and I normally resort to creating health and delicious meals using as little ingredients and time in the kitchen as possible. Remember – easy way out.

After discussing what the Mister and I had in the fridge, and what we had a taste for, we created the following recipe:

Garlic Leek and Mushroom Chicken Teriyaki (Serves two)

You’ll need:

Cook noodles according to directions on box. Set aside.

Heat 1/2 tablespoon of oil in a pan on the stove top – medium heat. Add garlic and cook until browned. Add chicken and cook 5-7 minutes. Add 1/2 tablespoon of olive oil along with chopped leek, bell pepper and mushrooms. Cook until veggies are tender. Stir in 2 tablespoons of teriyaki sauce and cooked noodles. ENJOY!

The Mister and I were trying to get the most bang for our buck calorie-wise, so that’s why we bulked up the veggies and only used a small amount of pasta. The pasta was certainly delicious, though! The noodles were the perfect consistency and sopped up the remaining teriyaki sauce, so each bite was packed with bursts of flavor. Annie Chun’s teriyaki sauce added tasty authenticity to the dish, without preservatives that are found in most other bottled sauces. This recipe yielded two HEAPING servings for around 425 calories each. Not bad for Chinese take-in! Due to the high volume of vegetables, this dish was very filling – so much so that I almost couldn’t finish it!

    That dish looks truly delish! And believe it or not, cheese would have completely changed to flavor of the pizza. It had a different sauce, almost like a barbeque-esque taste.
    But I def. was feeling a little apprehensive prior to my first bite haha
    I have used pad thai before. I put it over some pad thai noodles, tofu, cilantro and scramble egg. It was soo goood.

    I wasnt sure about the green monster at first either- and when I was making it my mom came in and looked at me and cringed (as im thinking- ah i hope this turns out okay haha). but honestly im in love- it was so so good! could you taste the protein powder? i want to try that but I am nervous. I saw that you said you wanted to try PB- do it! it was a good addition (I used naturally more…ever try it?) and also unsweetened vanilla almond milk gave it a nice flavor too :) – your blog is really awesome- i could use some advice on life haha- ill definitely keep track of it!

    That looks really tasty! And I’m interested in trying your green drink recipe; it looks good and I’ve never had spinach like that before. But I think I would use PB2 rather than protein powder. Mmm food.

    That looks great! I’ve never made my own either… I’ll have to look up that package deal! Chinese is one of my weaknesses– I’m always up for takeout!– so it would be nice to make a homemade, healthier version!
