Daily Delish – Coconut Date Rolls

Daily Delish

Good evening!

Any LOST fans out there? The finale is tonight, so I’ll make this quick!

So earlier this week, I shared some of the goodies that Tierra Farm sent me. Today I broke into the coconut date rolls.

This was AMAZING. I plan on going home and hiding them from sharing the love with the Mister (what he doesn’t know won’t hurt him right?).

It tasted like a fresh, homemade version of the coconut pie Lara bar. This roll was melt-in-your-mouth-amazing.

Does anyone know how to make these? Do you think you need a dehydrator?

I’m sure I’ll be running out of this amazingness soon and I’ll need to get my fix! Looks like I’ll be paying a visit to the Tierra Farm online store!

Have you tried coconut date rolls? What is your favorite way to eat a date?

  1. I dont think you’d need a dehydrator… maybe a low oven, like, 195 or so, but not necessarily a dehydrator! I’ll look for my recipe for you :)

ooh, those look really good! dates in any form are pretty much okay by me. i don’t think you’d need a dehydrator if you used already dried dates.

    yay for lost!

  3. Wow, they look REALLY good… Enjoy Lost!

I’ve made coconut date balls before using only a blender and they tasted just like coconut creme pie larabars! All I used was dates, coconut and almonds, threw them all into a magic bullet and then rolled all of the crumbs together. Amounts don’t really matter, I used almost equal amounts of everything, a bit lesser on the coconut. Easy! And definitely no dehydrator necessary.

    Ive make these every week.
I put pitted dates, almond (or cashews) and coconut in a mini chopper food processor and chop till it forms a stick ball.

If you add cocoa (unsweetend) you get chocolate coconut ones.
I usually form them into a shape and cut and put on wax paper in the fridge.
They taste just like lara bars. No joking.
Here is what mine look like http://gallery.me.com/jchiarelli/100284/IMG_0336/web.jpg?ver=12423093090001

Dates+coconuts = heaven. I want to make some raw donut holes soon, and hopefully they’ll taste similar to that ;)
