Daily Delish – Say Cheese! ;)

Who doesn’t love mac ‘n cheese? Pasta? Cheese? Sign me up.
Mac n’ Cheese was one of my favorite meals as a kid (along with grilled cheese, of course! Do you sense a trend here?). Side note: did anyone else eat hot dogs cut up in mac n’ cheese? The HORROR! I cannot even fathom it now, but I know I really loved that as a kid. (Bonus points for whoever knows which “Friends” character call this his/her favorite meal — DOUBLE bonus points for those of you who know the other Mac ‘n Cheese Friends references – hint: has to do w/ Joey…)
Anyway, there is no arguing mac n’ cheese’s deliciousness, that’s for sure! But the calories? Not so cool! So you can imagine my excitement when Fiber Gourmet sent me their healthy version of one of my favorite food pastimes, Mac mmm Cheese (cheesy cute name, huh?)
I’ll admit, I was a little skeptical. Healthy mac n cheese? Seriously? How? I mean the BEST part is the creamy, buttery, cheesy full-fat cheese! Not to mention the carby goodness of the pasta.
But the fun facts that Fiber Gourmet sent over had me intrigued:
- 35% fewer calories (standard mac is 260 calories, Fiber Gourmet is just 170)
- 18g fiber per serving (each box contains 3 servings)
- Nutrition Facts backed by actual laboratory analysis
- Cheddar cheese packet included – with NO artificial colors or flavors!
- 2-year shelf life (date-stamped)

So — how did it fare, you ask?

WOAH! That is a lot of pasta! The Mister and I shared the box! For just 255 calories, all of that pasta was mine! That’s still less calories than one serving of traditional macaroni! But, what good is having that much food if it tastes sub-par?
Not the case here. The texture of the pasta was dense and had just the amount of carby goodness I was looking for! I was afraid the texture would be off, but that was not the case! The cheesiness was there, but wasn’t as pronounced as I had hoped. In the future, I think I would use less of the pasta (maybe reduce by one cup?) and still use the entire cheese packet; I think that would help the cheese stand out more. Don’t get me wrong, it was still good, but as a lover of all things cheese, I wanted it even more cheesy
We paired it up with some broccoli, roasted in olive oil and balsamic for a balanced meal. This kept me full four hours! I guess I have the fiber to thank for that!
