Daily Delish – Oh sweet potato fries, why on earth did I wait so long?

Happy Friday, everyone!

So listen to how dumb I am. I packed myself a DELISH sandwich today. Arnold sandwich thin with sliced turkey, baby spinach, provolone and honey mustard. As the lunch hour approached, I headed down to the kitchen to grab it and it hit me. It’s Good Friday. Not only am I Catholic, but I’m a cantor at my church. Not good. I peeled off the turkey and ate the suddenly extremely sub-par sandwich.

Luckily, my eats last night were scrumptious! (I don’t know why I just said that, I mean, it’s not like that makes up for the fact that I had to eat a satisfactory sandwich, but I digress…) For the past 2 years I have been meaning to make sweet potato fries. I don’t know why it’s taken me so long, but I finally did it!

I used Tina’s recipe from Carrots n’ Cake. They turned out wonderfully- so delicious!

The only thing I would personally recommend is upping the cook time. I like my fries pretty crispy and I needed to add about 10-15 minutes to the cook time to get the ‘crunch’ factor I wanted. I think I could have even left them in a bit longer, but the Mister and I were starving. I used one very large yam — almost 8 inches! I will definitely be making these much more often. I love the spices used, the cinnamon was such a great add-in and balanced out the paprika. so. good. The Mister LOVED them, as well ;) Make these ASAP!

    And K I’ll have to try that! Because as much as i love sweet potatoe fries, I hate them when they’re all soggy :S
