I’ve decided to post today’s daily delish a bit early today because I wanted to remind you all of the contest and give you a bit more time to send your photos. Anyway, today’s daily delish was actually my dinner last night.

Shrimp kabobs with cooked corn. I sprinkled the corn with some Parmesan cheese and pepper. Don’t tell the Mister (since he clearly thinks I’m a culinary goddess! – ha, not!), but I cheated on the shrimp kabobs and bought them pre-marinated. If you do the same thing — don’t tell anyone! They taste so great, just soak up the compliments and credit ;)

However, when you choose pre-marinated dishes, MAKE SURE to read the labels! Many pre-marinated meats and veggies contain High Fructose Corn Syrup or other nasty sugars, fats and chemicals. Luckily, the one I selected was a healthy and delicious choice.

While I prefer to come up with my own marinade concoctions, this really did the trick last night when I was pressed for time.

    One of my regular shortcuts is that I buy a whole roasted chicken that has already been cooked by the deli at my grocery store. The ones I get are organic too! And then I can use the meat for a million different things, without having to worry about cooking a chicken. I like to make chicken salad and healthy chicken tacos or quesadillas with it. :)

  3. My favorite healthy shortcut…I think canned beans vs. dried. Or dried seasonings vs. fresh. Sometimes you just cannot be running to the store for fresh parsley!

    I use a combo of oils, spices and soy sauce for tasty marinades that turn out unique!

    My 2 favorite short cuts are microwaving and batch cooking. You can microwave just about anything if you need to. Since I usually cook for just myself, I’ll cook up a lot of something and save the left overs to have (i.e. baked tofu).

    I have a number of favorite shortcuts. Frozen brown rice is fabulous. And though I almost never buy it, pre-minced garlic has saved me on a few nights when even the effort of garlic chopping was too much.
